      I was JUST thinking about making pistachio butter, but I wasn't sure how it would turn out. Glad to know it's as good as it sounded in my head! 😉 And I feel like these cookies were made for me - definitely bookmarking your recipe!

      Hi Kristy,

      These look absolutely divine! I love all nut butters, and I recently discovered pistachios. Have you tried roasting them as you would peanuts? Swoon. I also rock a No-Name Food Processor, purchased at the grocery store 5 years ago for $15. It maxes out at sunflower seed butter (with the "burning rubber" smell!), unfortunately. But this recipe has convinced me - for a "no reason" gift to myself, I'm getting a food processor!

      I am a student, and thus light on funds. What is the best food processor out there that will let me make nut butters to my heart's content? An extra bonus would be easy to clean, as I generally use my beloved food processor 2-3 times/day on the weekend. (If I was stranded on a deserted island and only allowed 2 kitchen utensils (plus a wooden spoon) it would be my food processor and avocado masher). I'm willing to pay for quality - as long as it lasts me 5 years of nut butter bliss!

        Katie! I know I'm interrupting here, but I think Cuisinart makes the best food processor HANDS DOWN. I've had mine for nearly 12 years and although I've had to replace a part here or there (a couple got smashed in a move) the motor is as strong as day one! I love it! It's totally worth the investment!

        Thank you Katie! I'm so glad you like them! I'm with you- I use my food processor pretty much daily so investing in a good one is a smart idea. If you're low on funds, however, Gena (at Choosing Raw) mentioned that she purchased a refurbished one on Amazon to keep at her mother's house and she loved it.

        I would have to agree with Somer here. My food processor is a cuisinart and I love it. The one before it was also a cuisinart, but one of the blender/food processor contraptions. The food processor was smaller and could only handle small jobs. I burned it out trying to puree dates 1 too many times. 🙂 I also have several other cuisinart appliances and I love their quality as well.

          Kristy - the idea of a refurbished one is excellent! I am always a bit hesitant when eBay says "used" or "refurbished", but for some reason I feel like Amazon has some sort of quality control. I make smoothies in a food processor, so I'll avoid the blender/food processor combo ... whenever I feel adventurous I blend dates in my current food processor and almost literally watch the sparks fly!

          I've been coveting a CuisinArt food processor for a while, but have always been scared off due to the price tag. Sounds like it's worth it though.

      OH MY!! PISTACHIO BUTTER? How come I never thought about pistachio butter? I adore pistachios, just looking at that creamy smooth thick green paste just makes me want to happy dance. 😀 And those cookies are gluten-free? How cool is that? Is it so fantastic that I can't even stop using rhetorical questions? Oh my.

      If you're debating making these cookies, don't wait any longer. I've made them several times for others (and for just myself...hee hee hee!) and they're always a hit! I only wish I could lay claim to the idea! 🙂
